Lemon and green apple lead, with white flowers, a hint of white peach and the appellation's characteristic oyster shell and flint note underneath. The palate is dry, precise and finely textured, closing on a long chalky, saline finish.\u003c\/p\u003e\n\u003cp\u003eBillaud struck out on his own in 2009 after leaving Domaine Billaud-Simon, bought back four hectares of family vineyard, and from 2015 has worked from a gravity fed cellar. His wines have become some of the most sought after in Chablis.
