The Pinot Noir is fermented largely as whole bunches with no punching down, relying on gentle pump-overs, before maturing in oak barrels with a modest proportion of new wood.\u003c\/p\u003e\n\u003cp\u003eThe result is a delicate, perfumed Pommard showing rose petal, fresh strawberry and cherry over hints of spice and earth, with a silky, fragrant and layered palate. Decant for half an hour when young and serve alongside roast duck, veal with mushrooms or a cheese board of washed-rind cheeses.
