The fruit comes from the En Gaillard and Château Gimont plots at Montigny-lès-Arsures, just north of Arbois, where grey Lias marl soils produce particularly fine Savagnin.\u003c\/p\u003e\u003cp\u003e'Ouillé' means the barrels are kept topped up, preventing the flor yeast and oxidative character found in the region's traditional Savagnin and vin jaune. The wine is fermented with native yeasts and raised partly in tank and partly in oak, keeping the focus on fruit and minerality. Expect wild lemon, pear skin and green herbs on an aromatic, saline palate with a long, mineral finish.\u003c\/p\u003e\u003cp\u003eDomaine Rolet was founded in Arbois in 1942 by Désiré Rolet and has grown into one of the Jura's larger family-run estates, with around 65 hectares of vines spread across Arbois, Côtes du Jura, L'Etoile and Château-Chalon.
