The domaine is certified organic (Ecocert) and biodynamic (Biodyvin), with roots going back to the 1890s. 'En Chenin' is drawn from a four-hectare selection on the left bank of the Layon.\u003c\/p\u003e\u003cp\u003e100% Chenin Blanc from old vines, some planted as early as the 1910s, on silt and grey schist (Brioverian metagreywacke) soils across north-east and south-east facing parcels. Expect a dry, detailed and mineral-driven Anjou white with aromas of pear, quince and citrus, a textural, saline palate and a long, stone-laced finish typical of top Chenin on schist.\u003c\/p\u003e\u003cp\u003eWhole-cluster pressed with spontaneous partial malolactic fermentation, then aged around eight months on lees in a mix of 400–500L seasoned barrels, 20hL puncheons and underground sandstone tile-lined tanks — varying year to year.\u003c\/p\u003e\u003cp\u003e\u003cem\u003eVintages may vary.
