The fruit ferments in concrete with a portion of whole bunches and a long maceration, then the wine is matured in oak barrels and bottled unfiltered. It is a complex, powerful and structured style, with dark cherry and plum fruit, violet and spice, and firm yet fine tannins supporting a long, savoury finish.\u003c\/p\u003e\u003cp\u003eGive it some air before serving in a large Pinot Noir glass, and match it with braised beef, lamb shoulder, venison or a hearty cassoulet.
