The vineyards have been farmed organically since 2017, with biodynamics the stated goal for the future.\u003c\/p\u003e\n\u003cp\u003eHer Moulin-à-Vent comes from the lieu-dit Les Michelons, a parcel of just over a hectare that joined the domaine in 2017. Moulin-à-Vent is often regarded as the most structured and age-worthy of the ten Beaujolais crus, its Gamay drawing depth and grip from the region's granite-based soils.\u003c\/p\u003e\n\u003cp\u003eYields are kept low, and the wine is fermented in concrete vats with a maceration of around three weeks before ageing for 12 to 18 months in oak barrels or vats.
