She trained in oenology in Oregon and Montpellier and refined her craft in Burgundy before buying an estate in Morgon in 2013. Her six hectares of old vines, averaging around 60 years, are certified organic, and she crops them at very low yields.\u003c\/p\u003e\u003cp\u003eCorcelette sits in the north-west of Morgon, on sandy, granitic soils that give a finer, more mineral expression of the cru. The fruit ferments in concrete with a portion of whole bunches and a long maceration, then the wine is aged in oak barrels and bottled unfiltered. It is deep, serious and elegant. It opens quietly, with youthful blue and dark berry fruit, then builds in intensity across the palate towards a long, structured finish marked by pronounced wet-stone minerality.\u003c\/p\u003e\u003cp\u003eDecant before serving, and pair it with roast lamb, duck confit or grilled mushrooms.
