Jacques Carillon holds a little over half a hectare here, on the mid-slope of Puligny close to the grand crus, and it produces one of the firmest and most mineral wines in his range.\u003c\/p\u003e\u003cp\u003eThe nose is cool and slow to open, with lemon oil, white flowers and a pronounced note of crushed stone ahead of toasted almond. The palate is tightly structured and deeply concentrated, with a chalky, almost gritty texture, a firm acid spine and a long, stony, saline finish. Give it a few years.\u003c\/p\u003e\u003cp\u003eThe Carillon family has made wine in Puligny-Montrachet since at least 1632, and archives record a Jehan Carillon working as a vintner in the village as far back as 1520.
