The combination is deliberate, pairing the tension and low yields of the stony ground with the depth that only age in the vineyard provides.\u003c\/p\u003e\u003cp\u003eThe result is a wine of extreme concentration and high acidity, with lemon peel, greengage and white flowers on the nose over almond and a hard mineral core. The palate is intensely pure and tightly drawn, with a chalky, almost crystalline texture and a finish that seems to go on far longer than the modest appellation on the label would suggest.\u003c\/p\u003e\u003cp\u003eJean-Marie Guffens and Maine Heynen have farmed at Pierreclos, in the heart of the Mâconnais, since the late 1970s.
