Their father Joseph was farming cereals here in 1985, and although the family had held vineyards for generations they only began making their own wine in 1996, encouraged by early sales to restaurants in Paris. Jérôme joined his older brother in 2000.\u003c\/p\u003e\n\u003cp\u003eThey now farm close to thirty hectares, planted entirely to Chardonnay, on the Kimmeridgian marl and fossilised oyster shell that gives Chablis its signature. Farming has followed sustainable and organic practice from the outset. In the cellar the approach is deliberately restrained, with stainless steel used to preserve purity and larger casks brought in where they add complexity without covering the site, fermentation on indigenous yeasts and minimal filtration.\u003c\/p\u003e\n\u003cp\u003eThis is a pure, precise village Chablis. Lemon and green apple lead, backed by white flowers, oyster shell and a bracing wet stone minerality, with a dry, crisp finish.
