Herbicides were abandoned in the mid-1990s, yields are controlled by hard winter pruning and the fruit is sorted rigorously in the vineyard.\u003c\/p\u003e\n\u003cp\u003eIn the cellar Jean-Marie, who trained with Henri Jayer and at Domaine Drouhin in Oregon, keeps intervention to a minimum. Each parcel is vinified separately with native yeasts after a short cold soak, extracted by hand punch-downs, moved by gravity to barrel and aged on fine lees with no more than 20% new oak.
