His sons Jeremy and Alec, together with Jeremy's wife Diana, now run the domaine, which has grown into one of the most celebrated names in the Côte de Nuits.\u003c\/p\u003e\n\u003cp\u003eThis Morey-Saint-Denis 1er Cru is a blend of several premier cru parcels around the domaine's home village, including Les Ruchots, Les Millandes and Clos Sorbé. The estate has farmed with biodynamic practices since 2003 and has held organic certification since 2011, with ploughed soils and largely manual vineyard work.\u003c\/p\u003e\n\u003cp\u003eDujac is renowned for its use of whole clusters, with little or no destemming depending on the vintage. Fermentation is with indigenous yeasts, followed by around two weeks of maceration, gentle extraction, a light pressing and gravity transfer to barrel for 14 to 18 months of ageing.
