Only Chardonnay is planted here, on clay and limestone soils, and Domaine Dugat-Py's parcel dates back to vines put in the ground in 1970.\u003c\/p\u003e\n\u003cp\u003eBetter known for the old vine reds of Gevrey-Chambertin, Dugat-Py brings the same exacting approach to its whites. The vineyards are farmed organically, worked by horse in places and treated only with organic preparations. The wine is fermented in barrel and left on its lees for around eighteen to twenty months, with a generous share of new oak, before bottling.\u003c\/p\u003e\n\u003cp\u003eThe result is a white of real presence. Citrus zest, ripe pear and white flowers are lifted by a pastry cream richness from the extended lees ageing, while tangy acidity and a chalky, structuring grip keep everything taut.
