Cuvée Halinard is the estate's Bourgogne Rouge, a Pinot Noir given the same attention as the village and cru bottlings further up the range.\u003c\/p\u003e\n\u003cp\u003eFarming here is organic and painstaking. Only organic preparations have been used since 2003, biodynamic herbal teas are made in house, some rows are worked by horse, and the tractor used on steeper ground is a light one chosen to protect the soil. Winemaking is traditional and low intervention: no cold soak, a proportion of whole bunches, patient ageing in oak barrels of which only a small share are new, then bottling unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eThe result is a regional Burgundy with genuine Gevrey character. Bright red cherry and redcurrant fruit sits over earthy, gently spicy undertones, the texture is supple and the finish is fresh and savoury.
