The Domaine wines were created to separate fruit from his own vineyard from his bought-in Defialy range, and all come from the Candlebark Hill vineyard in the Macedon Ranges, which Hewitt farms to organic principles. The name is an acronym for \"don't ever forget I'll always love you\", in honour of his parents.\u003c\/p\u003e\n\u003cp\u003ePinot Noir is a natural fit for the Macedon Ranges, one of the coolest wine regions on the Australian mainland. For the 2025 a large share of the fruit was fermented as whole bunches, and the wine was matured for around a year in French oak, a quarter of it new, followed by a couple of months in stainless steel with only a very small sulphur addition before bottling. As with all of Hewitt's wines, it is wild fermented and left unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eThe whole-bunch component brings lift, spice and a fine, savoury frame to bright red-fruited Pinot, with the fresh acidity that defines the region.
