Hewitt's approach for the Domaine range is more traditional than his skin-contact Defialy wines: single varieties, careful farming and picking, and a light hand in the cellar. The fruit is destemmed and given an extended time on skins before a long maturation in a mix of new and older oak, and the wine is wild fermented and bottled unfined and unfiltered.\u003c\/p\u003e\n\u003cp\u003eExpect a refined, medium-bodied, cool-climate Cabernet with fresh acidity and silky tannins, more in the mould of a classic luncheon claret than a big, ripe red.
