Founded in 1999 to bring together the finest Burgundian vineyard holdings the Boisset group had acquired since 1964, the domaine today farms around 44 hectares spread across more than 30 appellations and is certified organic, with biodynamic principles applied throughout the vineyards.\u003c\/p\u003e\u003cp\u003e100% Pinot Noir from the village appellation of Gevrey-Chambertin, including the historic Les Evocelles parcel, the very first vineyard acquired by the Boisset family in 1964. The soil is clayey silt near the surface over pure silt deeper down, with a lightly calcareous character. Expect an energetic, structured Gevrey with peppery aromatics, dark cherry, woodland spice and a saline, mouthwatering finish.\u003c\/p\u003e\u003cp\u003e50% whole-bunch fermentation, with grapes hand-harvested and tipped into tank by gravity, no added yeasts or enzymes. A 5-day cold pre-fermentation maceration followed by a total maceration of around 24 days, with two pump-overs and a daily cap punching, then aged for 16 months in oak barrels of which around 26% were new.\u003c\/p\u003e\u003cp\u003e\u003cem\u003eVintages may vary.
