Its clay-limestone soils are perfectly suited to Pinot Noir, and more than half the vines are over 60 years old, with the oldest plantings dating back to 1958. Low yields from diligent green harvesting and rigorous selection ensure exceptional concentration and purity of fruit.\u003c\/p\u003e\n\n\u003cp\u003eHand-harvested grapes are destemmed, cold-soaked for a week, then fermented on indigenous yeasts with approximately three weeks of maceration. The wine is aged in French oak barriques (around 30% new) for 15 months before being bottled unfined and unfiltered. On the palate, expect a full, luxurious mouthfeel with layers of dark cherry, baking spice, and mineral complexity, underpinned by silky tannins and a long, creamy finish.
