The name came from vines planted between the woods where the blackbirds sang, and the domaine has stayed in the family, passing from Adhemar and Marguerite to their son Francis and now to their granddaughters Angelique and Virginie.\u003c\/p\u003e\n\u003cp\u003eBarrel free Chablis has been the house creed for three generations. Adhemar disliked everything about the barrel making trade and simply refused to use them, working instead in cement and stainless steel, and his descendants have never seen a reason to change. This Vieilles Vignes bottling comes from the estate's older plantings and is matured for around nine months in enamelled vats.\u003c\/p\u003e\n\u003cp\u003eWithout any wood in the way, what you get is Chablis in its purest form: lemon, green apple and white flowers over an emphatic wet stone and oyster shell core, dry, taut and lifted, with a long saline finish.
