He farms the domaine's four or so hectares along organic and biodynamic lines, using cover crops, hand canopy work and organic composts only.\u003c\/p\u003e\n\u003cp\u003eLes Cortechats is a single parcel of just over one hectare planted in 1959, so this Bourgogne Pinot Noir comes from genuinely old vines. Some whole bunches are kept during fermentation and macerations are long, giving a red with more depth than its regional appellation suggests.
