Philippe Collotte released the first domaine-bottled wine in 1981, and his daughter Isabelle now leads the estate, which has grown to include small parcels in neighbouring Gevrey-Chambertin. The vines are ploughed without herbicides and the reds are fully destemmed.\u003c\/p\u003e\u003cp\u003eLes Evocelles is a village lieu-dit high on the slope at the northern end of Gevrey-Chambertin, where the domaine's vines were planted in 1955. The cuvée is a selection of the best barrels from these old vines, giving a Pinot Noir with more depth and detail than the domaine's standard Gevrey: dark cherry and blackberry fruit, savoury spice and earthy notes, firm yet fine tannins and a long, mineral finish.\u003c\/p\u003e\u003cp\u003eIt will benefit from some time in the cellar and pairs beautifully with roast beef, braised lamb, game or aged Époisses.\u003c\/p\u003e\u003cp\u003e\u003cem\u003eVintages may vary.
