The holding runs to around twenty hectares, taking in Petit Chablis, Chablis and three premier crus.\u003c\/p\u003e\n\u003cp\u003eThe approach in the vineyard is deliberately contrary to local habit. Vines are planted at a low density of around 5,800 to the hectare, well below the Chablis norm, and pruned to a single guyot rather than the usual double, both choices made to keep yields down and concentration up. Treatments are applied only when genuinely needed and fertilising is worked out plot by plot.\u003c\/p\u003e\n\u003cp\u003eThe wine that results is a straightforward, honest expression of the appellation: lemon, green apple and a touch of white blossom, cut through with the flinty, oyster shell minerality that comes from the region's fossil rich Kimmeridgian limestone.
