Twelve months in oak barrel with only around a fifth of them new is followed by at least six months resting in tank on fine lees, and there is no bâtonnage, so the texture that builds comes from time rather than stirring. The aim throughout is balance rather than either heavy richness or forced leanness.\u003c\/p\u003e\n\u003cp\u003eThe result is fresh and nicely detailed. Lemon, green apple and white peach are backed by white flowers, a light hazelnut note and a chalky mineral finish, with a creamy edge that gives it more presence than the appellation usually manages.
