The palate is dry, taut and beautifully balanced, with a chalky texture, real length for a wine of this weight and a clean, mouth-watering finish that makes it an outstanding partner for shellfish.\u003c\/p\u003e\u003cp\u003eDomaine A. et P. de Villaine is owned by Aubert and Pamela de Villaine, with Aubert's nephew Pierre de Benoist managing the estate for more than twenty years now. The vineyards have been certified organic since 1986, remarkably early for Burgundy, and Pierre has taken things further with biodynamic trials.
