Planted on granitic, sandy soil in a natural north-facing amphitheatre at around 610 metres elevation, it's one of the coolest and highest sites on the Australian mainland.\u003c\/p\u003e\u003cp\u003eThe resulting wine is a cool-climate, mineral-driven Chardonnay. Expect yellow stonefruit, lemon verbena, citrus zest, green almond and a touch of honeycomb, all framed by a chiselled, saline texture and fine, persistent acidity that drives a long, savoury finish.\u003c\/p\u003e\u003cp\u003eThe fruit is whole-bunch pressed and transferred to French oak (with a portion new) where it undergoes wild, slow fermentation and full malolactic fermentation, ageing on lees for around 12 months.
