Its southern aspect is tempered by a position low in the valley, keeping conditions cool, while shallow clay soils over limestone marl add tension. Fruit from vines aged between 40 and 70 years is whole-bunch pressed, fermented cool in stainless steel with indigenous yeasts, and rested on fine lees for around four months before bottling.\u003c\/p\u003e\u003cp\u003eExpect lemon curd, white peach and hazelnut with chalk and flint aromas, followed by a dense yet balanced palate and a long, citrus and chalk finish.
