It has been owned by the Wilmers family since 1998 and is one of the few great Bordeaux estates that makes only red wine, from a compact vineyard of around 30 hectares.\u003c\/p\u003e\n\u003cp\u003eThe property's treasure is an old block, planted well over a century ago to a field mix of varieties, which contributes a significant share of the grand vin. Overall plantings run to roughly 60 per cent Cabernet Sauvignon and 34 per cent Merlot with a little Cabernet Franc and Petit Verdot, and the wine is raised for sixteen to eighteen months in French oak, around half to sixty per cent of it new.\u003c\/p\u003e\n\u003cp\u003eHaut-Bailly is admired above all for its texture. Dark cherry, cassis and violets are carried on tannins often described as velvet, with cedar, graphite and a gentle savoury earthiness behind.
