Fruit is picked by parcel and the wine is matured in French oak barrels, with a measured proportion of new wood chosen to frame rather than mask the fruit.\u003c\/p\u003e\n\u003cp\u003eCanon is one of the most precise wines of the appellation. Red cherry, raspberry and cassis come with rose petal, fine spice and a cool, chalky minerality, carried on silky tannins and a long, taut finish.
