That exposure produces the most acidic and tightly wound Chardonnay in the area, fruit that the large houses have long prized as the backbone of a blend and that rewards being bottled on its own by a grower willing to let it stand exposed.\u003c\/p\u003e\u003cp\u003eThe nose is bracing and precise, with lime, green apple and white blossom over a clean chalky note and a hint of toasted grain from a year in wood. The palate is lean, taut and utterly dry, with a piercing acid line, a fine saline texture and a long, mouth-watering finish.\u003c\/p\u003e\u003cp\u003eFlorent and Julien Mignon began bottling in 2015 after their family had spent generations selling its grapes on.
