The palate is taut and beautifully defined, driven by a fine acid line with the saline, almost powdery texture that the village is famous for, and the extra brut dosage leaves the finish bone dry and very long.\u003c\/p\u003e\u003cp\u003eGirard-Bonnet is based in Le Mesnil-sur-Oger, in the heart of the Côte des Blancs, and is run by Paul Girard, born in 1995.
