The brewery still works from its original building, which also houses the Brussels Gueuze Museum, and produces only lambic using fully spontaneous fermentation: unboiled wort is left to cool overnight in a shallow copper coolship in the attic, where wild yeasts and bacteria from the Brussels air set fermentation going.\u003c\/p\u003e\u003cp\u003eGueuze is made by blending young and older oak-aged lambics. The residual sugars in the young lambic trigger a natural second fermentation in the bottle, giving the beer its fine sparkle with no added sugar or yeast. It is sometimes called Brussels Champagne for exactly that reason.\u003c\/p\u003e\u003cp\u003eExpect a bone-dry, bracingly tart beer with a lively mousse and aromas of citrus, green apple, oak, hay and the signature barnyard funk of wild yeast.
