Because no young lambic is blended in, there is no second fermentation in the bottle, so the beer is still rather than sparkling.\u003c\/p\u003e\u003cp\u003eThe result is deeply complex and dry, with oxidative, sherry-like and oaky notes, soft acidity and earthy wild-yeast character.
