The whisky is matured in first-fill ex-sherry casks from Jerez that previously held a whole spectrum of styles, including Oloroso, Pedro Ximénez, Amontillado, Palo Cortado, Fino and Moscatel. Each cask contributes its own character, and the cool climate of the Tasmanian highlands lets that influence build slowly over time.
