His own vines are certified organic and farmed biodynamically, and for purchased fruit he buys grapes only, working with growers who farm sustainably, organically or biodynamically.\u003c\/p\u003e\n\u003cp\u003eHis village Volnay is a blend of lieux-dits that shifts with each vintage. Over recent years it has drawn on Les Grands Champs and La Gigotte, along with Les Grands Poisots and Les Petits Poisots on the Pommard border, and at times younger vines from premier cru sites such as Les Mitans and Santenots. Leroux hand-selects the best bunches at the sorting table, and a small portion of whole bunches is included in some years.\u003c\/p\u003e\n\u003cp\u003eFermentation is with ambient yeasts and a maceration of around three weeks, followed by ageing mostly in barrel with no more than 30% new oak.
