His range covers the Côte d'Or from Chassagne-Montrachet up to Gevrey-Chambertin, and he buys only grapes, never juice or finished wine.\u003c\/p\u003e\n\u003cp\u003eHis village Gevrey-Chambertin is a blend of lieux-dits, traditionally led by Les Seuvrées alongside sites such as La Justice, Billard and Le Fourneau. The make-up changes with the vintage, and in 2024 the blend also includes fruit from Charmes-Chambertin and the premier cru Champeaux.\u003c\/p\u003e\n\u003cp\u003eFermentation is with ambient yeasts and a maceration of around three weeks, and the wine is aged mostly in barrel with no more than 30% new oak, so the oak stays subtle.
