His estate of around eight hectares, much of it in Meursault, has been certified organic since 2016 and is farmed biodynamically.\u003c\/p\u003e\n\u003cp\u003eHis Bourgogne Blanc is drawn largely from estate fruit on the Meursault side of the Côte de Beaune, including parcels such as Les Millerands, Sous la Velle and Les Belles Côtes, with a small amount of purchased fruit from the Hautes Côtes de Beaune above Pernand-Vergelesses in some vintages. The result is built much like a junior Meursault.\u003c\/p\u003e\n\u003cp\u003eThe Chardonnay is whole-cluster pressed, fermented with ambient yeasts and matured in large casks and foudres, keeping the focus on fruit purity and texture rather than oak.
