It was historically a large walled section of the hill, known as Clos du Midi, and the wine now carries the shorter name because a service road cuts between the vines and the old wall.\u003c\/p\u003e\n\u003cp\u003eBreze is treated as the unofficial grand cru of Saumur, its slopes built on tuffeau, the porous chalky limestone that gave the Loire its Renaissance chateaux. Midi is fermented and raised entirely in concrete tanks and eggs, with no oak at all, and the absence of wood leaves the dense, ripe fruit and the phenolic, gently chewy texture completely exposed.\u003c\/p\u003e\n\u003cp\u003eThe result is a Chenin of real presence: yellow orchard fruit, ripe pear, honeysuckle and beeswax over a firm chalky spine, with a saline, mouth watering finish. Lambert founded the domaine in 2017 by uniting his family's Domaine de Saint-Just with rented parcels at Chateau de Breze, and farms more than forty hectares organically.
