Arnaud Lambert farms eight parcels here, and Clos David is his coolest site: a monopole of Chenin Blanc planted in 1982 on the northern side of the hill at around sixty metres, facing north west, on tuffeau bedrock under a sandy tuffeau topsoil.\u003c\/p\u003e\n\u003cp\u003eThat cool, late ripening aspect shows directly in the glass. This is a taut, chalky, high definition Chenin, built on citrus, white pear, quince and a distinct crushed stone character rather than on ripeness or weight. Acidity is fine and persistent, the texture saline and drawn out, and the finish long and dry.\u003c\/p\u003e\n\u003cp\u003eLambert established the domaine in 2017 by bringing together his family's Domaine de Saint-Just with the rented parcels of Chateau de Breze, and now farms more than forty hectares organically. Saumur's continental climate here is unusually dry thanks to the rain shadow of the Massif Armoricain.
