The wines are now made in the couple's own gravity-fed cellar in the village.\u003c\/p\u003e\u003cp\u003eFolatières is one of the largest and most celebrated Premier Cru sites in Puligny-Montrachet, and Clos des Folatières is the walled heart of the climat. The Chardonnay shows broader, riper fruit than Pernot's other Premier Crus, with white peach, ripe pear and lemon curd wrapped around a saline, finely etched core.\u003c\/p\u003e\u003cp\u003eVineyards are farmed sustainably with light ploughing, no chemical sprays, and ongoing biodynamic trials. Grapes are hand-picked, carefully sorted and pressed in pneumatic or vertical presses depending on the cuvée, with native yeast fermentation and ageing in oak for up to 11 months.
