The planting density is about 2200 plants per hectare from which we obtain around 3ookg\/ha (1.3 kg per vine). El Espejo has a really singular soil. It has much less pebbles than usual and also a higher proportion of clay which translates in a much cooler soil. A layer of marl and limestone is found at only 40 cm from the surface, which gives a higher calcareous character to the wine.\u003c\/p\u003e\n\n\u003cp\u003eThe grapes were harvested by hand in 300kg crates. Once in the cellar, the clusters are whole pressed and must ferments in French and Austrian oak, 25% new. After that, malolactic fermentation and ageing for 11 months Later, the wine stays for another 7 months in stainless steel tanks. The  20–50 years old vines are trained in the traditional goblet style at low density and grow on sandstone soils at 780m. Manuel Cantalapiedra farms organically and takes a low-intervention approach in the cellar.\n\u003cbr\u003eGrapes are hand-harvested into small 15kg crates. Around 80% are destemmed and gently crushed before fermenting in stainless steel, while the remaining 20% are fermented as whole clusters in open-top vats. Fermentation lasts just over three weeks. After pressing, the wine is aged for eleven months in French oak barrels of varying sizes (225–500 litres). Very low yield, around 25hl\/ha.\u003c\/p\u003e\n\n\u003cp\u003eThe grapes were harvested by hand on August 21th in 15-kilo crates and pressed straightaway once in the cellar. The spontaneous fermentation was carried out for 45 days without temperature control in French oak barrels of different sizes. Natural malolactic fermentation. Ageing on lees without battonage for 12 months in French oak barrels and another 11 months in steel tanks. Manuel is a third-generation grower (and a trained classical pianist) known for taking an even more low-intervention approach with this project than the family wines, working only with his own vineyards.\u003c\/p\u003e\u003cp\u003eCampanella is a red wine from old-vine Garnacha and Cariñena from the Toro area, vinified in Manuel's La Seca cellar. The result is a fragrant, fresh-styled red with notes of red and dark berries, dried herbs and a touch of spice, with the fine-grained tannins and energy that mark Manuel's hand.\u003c\/p\u003e\u003cp\u003eFarming is organic with biodynamic practices, with hand harvesting, spontaneous fermentation using native yeasts and minimal sulfur additions.
